Ingredients for Manchurian Balls:
Finely Chopped Cabbage- 4 tbsp
Finely Chopped Carrot- 1/2
Finely Chopped Onion- 1 Medium Size
Finely Chopped Capsicums- 1/2
Finely Chopped Spring Onion- 1 (white part)
Finely Chopped Green Chili- 1
Black Pepper Powder- 1/2 tbsp
Chinese Salt (Ajinomoto)- 1/2 tbsp
Rock Salt- 1/4 tbsp
Corn Starch- 2 tbsp
All Purpose Flour/Maida- 2 tbsp (Increase the quantity, if required to make balls)
Ginger & Garlic Paste- 1 tbsp
Chili Sauce- 1/2 tbsp
Soy Sauce- 1 tbsp
Oil for frying
Ingredients for Manchurian Gravy:
Olive Oil- 2 tbsp
Chopped Ginger- 1-2"
Chopped Garlic Cloves- 4-5
Chopped Spring Onion- 1 (green part)
Finely Chopped Onion- 1/2-1 (Medium Size)
Sliced Capsicum- 1/2-1
Chopped Green Chili- 1-2
Soy Sauce- 2-3 tbsp
Chili Sauce- 1 tbsp
White Vinegar- 1tbsp
Corn Starch- 1-2 tbsp (to make a thick consistency)
Black Pepper- 1/2 tbsp
Chinese Salt (Ajinomoto)- 1/2 tbsp
Rock Salt- 2/3 tbsp (as per taste)
Water- as required for thick consistency


Method:

  • First chop all the vegetables and keep them ready.
  • Now in a big size bowl take all the manchurian balls ingredients and mix well. It should be thick enough to make soft balls. you can increase Maida (all purpose flour) quantity if its runny.
  • Heat up the oil on medium high flame for deep frying and pour manchurian balls in kadhai/wok. Stir occasionally until balls turn golden brown. When its done, bring the ball out and put them on a kitchen towel to drain off the excess oil & keep aside.
  • Follow the same process with remaining balls.
  • Now take another large kadhai/wok and add 2 tbsp oil and heat it up. Now saute ginger, garlic, onion & green chili.
  • Now add Capsicum, let it cook until the capsicum looks slightly steamed.
  • Now add vinegar, soy sauce, black pepper powder, rock salt, chili sauce, and Chinese salt.
  • In a separate bowl take corn starch, add half cup of water, mix this slurry well and pour it in the kadhai. Now add 1 cup of water. Mix it well.
  • Continue to boil until gravy thickens and turn glossy. It turns thicker slowly. when it boils it changes the color to dark brown, if doesn't then  you can add 1-2 tbsp more of  soy sauce and boil again for 3-5 minutes.
  • Add in prepared manchurian balls, add chopped green spring onion.
  • Finally enjoy veg. manchurian with Noodles or fried rice.
Notes:
  1. If it's too thick add little water or if it's runny add some more corn starch.
  2. Always mix corn starch in water first then add in gravy.
  3. Chopper can be used to chop vegetable for manchurian balls.
