Ingredients:
- Potatoes: 3 Large (Boiled & Meshed)
- Tomatoes:-2 Large (Pure)
- Green Chilly- 2
- Green Coriander/Cilantro- 1/2 Bunch
- Cinnamon- 1 small piece
- Cardamon (Ilaichi) powder- 2
- Cloves- 2-3
- Whole Dry Red Chilly- 2
- Kasoori Mehi- 2 t-spoon
- Salt- 1 t-spoon (as per taste)
- Coriander Powder- 1/2 t-spoon
- Cumin Seeds- 1/2 t-spoon
- Red Kashmiri Chilly- 1/3 t-spoon
- Garam Masala- 1/4 t-spoon
- Turmeric Powder- 1/2 t-spoon
- Asafoetida (Hing)- 1 pinch
- Ginger- 1 inch Finally chopped
- Mustard Oil- 3 t-spoon (or any oil of your choice)
- Ghee- 1/2-1 t-spoon (Compulsory)
- Heat oil & ghee in a pan, add cumin seeds, asafoetida, cinnamon, cloves and red dry chilly fry until splutter.
- Then add Ginger and tomato pure, after 1 minute add other spices (red chilly powder, coriander powder, turmeric, salt, garam masala, cardamon powder) and 1 t-spoon kasoori methi, saute them until oil starts separating from it.
- Now add boiled meshed potatoes in the masala and mix well.
- add 2 cups water in potatoes, it should have thick consistency.
- Cook for 10-15 minutes on low flame. you can smell good aroma of sabzi.
- Now add green chilly, coriander and remaining part of kasoori methi.
- Bhandare wale aloo ki sabzi is ready. Serve it hot with poori or paratha.
I tried this recipe at home and the taste was so good - tasted exactly like bhandare wali sabjee.
